Chestnuts with chorizo
Elaboration

(Ingredientes para 6 raciones)

1 kilogram of dried chestnuts, 150 grams of Fabes, 3 medium sized onions, 3 chorizos, 1 spoonful of sugar; olive oil and salt.

Leave the Fabes and the chestnuts to soak in water the night before cooking in cold water.

Put a pot in the cooker with water, add the chestnuts, the sugar, the onions already peeled and cut into little pieces, the fabes and a little bit of salt.

Let it cook at a low temperature until the chestnuts are soft. Take a handful of cooked chestnuts, grind them thoroughly and add to the pot.

Put a frying pan in the cooker with a trickle of oil and fry the chorizos. Once they are fried, cut them in halves and add them to the pot with the rest of the ingredients.

Let it boil, at a low temperature, until all the ingredients are ready, add salt if neccessary.

It must be taken into account that the water to boil the legumes must be free from lime.
