(Ingredients for 6 serves)

700 grams of fabes, 600 grams of squids, 500 grams of onion; squid ink, concentrated ground tomato; olive oil; salt and white pepper.

Leave the Fabes to soak in water the night before cooking.

Then put them in the cooker to stew with water and a trickle of olive oil. In a frying pan fry the onion slowly with olive oil until it is soft and add the squids cut into squares. Fry them slightly and add a trickle of concentrated ground tomato and the ink and let it boil for an hour and a half. Add salt and white pepper to avoid the sweetening produced for the onion.

Ten minutes before serving cook everything together to let the flavours mix and it is ready to eat.

It must be taken into account that the water to boil the legumes must be free from lime .
